A strong case for preserving bio - diversity. The sweet perfume, exotic color and less acidic flavor of the blood orange makes it a natural choice for our signature recipes and all things culinary from savory to sweet.
In France, blood orange juice sits rightfully alongside traditional orange juice at the market with abundant harvests in Spain, Italy and Morocco. What felt like a novelty at first became an obsession for our chef who claims to have drank blood orange juice every morning while living in Provence before going off to the farmers markets.
A hybrid of ancient cultivated origin, it is believed to be a cross between the pomelo and tangerine. There are several cousins in the blood orange family including Moro ( US ), Sanguignello (Sicily) , Tarocco (Spain) and most recently the Blood Lime (Australia).
Its color is attributed to the presence of caretenoids (found in carrots) and anthocyanins (water soluble vacuolar flavonoid pigments found in flowers).
